The sub-project looks at changes in the knowledge and actions of consumers and retailers and how this affects the organization of the supply chain for fresh products. Here, currently distinctive changes (organic products, products from the local area, year-round availability) with considerable effects occur.
The project "Knowledge and Goods II" is a sub-project of the Collaborative Research Center (CRC) "Refiguration of Spaces”.
As an interdisciplinary research team of geographers and sociologists, we are looking at the trade and consumption of fresh food in different urban areas. To this end, we study the urban development of Nairobi and Singapore and link this to other food-related topics such as the role of social segregation, colonial heritage and Kenyan food culture.
